Culinary Alliance Union Local 61 and the Pierce County Restaurant Association, small group signing papers at table. The Restaurant Association, representing restaurants, hotels, clubs, taverns and department store dining sections, was the negotiating body for owners and operators. The two groups, the workers union and the owners, signed a new contract including life and health insurance, premiums to be paid by employers. In an interesting sideline, the Association took out an ad on page 12 of the same paper, stating that it applauded this measure, that employees not worrying about the health and welfare of their families were better employees. It also stated that the cost of offering these benefits would be reflected in higher menu prices. Back row, left to right: John A.
